OK, we have a new favorite low-carb pasta and it is insane. INSANE. Like so good you’ll be convinced you’re not eating low-carb pasta, or even gluten-free pasta. Our friend Arash over at Shred Happens created the low-carb pasta company Kaizen and it is by far our favorite pasta. It’s not only low-carb but high-protein and plant-based as well!

Do you know how a lot of gluten-free pasta just doesn’t hold up? It falls apart in the sauce, doesn’t hold up well to being tossed as in a pasta salad, and doesn’t have that chewy Al dente bite that we all love in a good pasta. The low-carb pasta options on the market are also pretty nonexistent, until now. This post isn’t sponsored, we just really love this brand and wanted to share it with you along with a tasty recipe for a not-so-traditional pasta salad. 

We’ve been into crunchy almost raw salads lately and this Thai Peanut Pasta Salad does not disappoint. It has crunchy cabbage, carrots, green onions, red bell pepper, green onions, Thai chilis, chopped nuts, Thai basil, cilantro, and the creamiest satay sauce you’ll want to eat by the spoonful.

Ingredients

  • 1 package Kaizen pasta cooked according to package directions and drained
  • 1 cup chopped cabbage
  • ¼ cup sliced green onions
  • 1 small carrot diced
  • 1 English cucumber diced
  • ½ red bell pepper diced
  • ¼ cup crushed peanuts or another nut – we love Trader Joe’s Thai Almonds in this!
  • 2-3 Thai chilies minced
  • Handful cilantro minced
  • Handful of Thai basil minced

Satay Sauce:

  • ½ cup peanut butter sunflower butter works great for folks who can’t have peanuts
  • 2 tablespoons tamari
  • 2 tablespoons water
  • 2 tablespoons powdered Swerve
  • 1 tablespoon Sambal Oelek
  • 1 tablespoon rice wine vinegar
  • Sea salt to taste
